I was unable to completely read this book enough to give a complete review. I have had it for a while but in the digital format with a timed copy, it was hard to relish it.
That was unfortunate because I think it is a very thorough presentation. It not only introduces the concept of vegan cuisine in the simplest terms, it begins with the nutrients present in the most basic ingredients of average meals and helps build our own agenda.
I thought I had more time with it, but in the end, I did not go through the actual recipes and therefore cannot provide an in-depth review.
I would highly recommend this to those people who want to do a bit of research and begin a vegan/vegetarian journey.

I very much enjoyed this book. A great resource especially for new vegans! I wish there was a focus on gluten free as well, but I knew there wasn't going in.

This is a great book! It's super informative and gives a wonderful overview of why and how a plant based diet meets individual needs. It has helpful tips and separate chapters explaining the importance of specific food groups and helps readers to plan their meals.

The recipes are interesting but not always the most accessible in terms of ingredients one has at home or time and effort to be put into making meals, especially for busy families. However, I'm sure they are super tasty and the layering of ingredients to make balance meals is definitely super helpful to make sure your body gets the most nutrients it can!

This was an absolute delight. Alarming at times - yes. Who knew that so many foods had such bad effects on us? But I thought this was very well written. An absolute beginner in understanding nutrition - like me - can very easily follow the author's explanations. I have not tried the recipes yet but they look absolutely delicious and I cannot wait to try them. I am excited to see so many different breakfast foods in there, as I am (was?) still looking for an every-day option. I will most definitively go get this book when it's out.

This was a super interesting book with some great ideas. I wish I could have had a copy on my kindle rather than my phone, but for the sake of inconvenience, it was worth a read.

It has all the information needed to help anyone eat healthy vegan food. The science is explained, there are a wide range of recipes to help tempt, from breakfasts to desserts.

They do a very clever ‘build up your plate’ showing how ideally people should eat protein, leafy veg, grains and fat. And make it clear that grains can be substituted for each other in the recipes, which are straightforward.

Recommended, for anyone interested in vegan food.

Awesome: I can finally try some vegan recipes without being scared I would miss on some nutritions. Liked some of the meals, like in every cookbook: hit and miss but I am glad I tried it ;)

We did Veganuary this year and were pleasantly surprised by how easy it was to make tasty vegan meals. However, with two growing teens in the house, I was worried about whether their dietary needs were being met by a plant-based diet. This book explains the science behind it and it is reassuring. It's perfectly possible to be a healthy vegan! We loved the recipes and it has encouraged us to continue eating a more plant-based diet.

A book that is rich and dense in both information and recipes. The knowledge background of the authors was most evident here and I greatly appreciated the informative early chapters.

The few recipes I made from the book were quite good.

The only drawback for me is the time to make and easy availability of some of the ingredients noted.

Overall a welcome addition to my books on healthy eating. Much to absorb and learn here.

If you’re interested in the science of food & what should be eaten with what to give the best nutritional value then this is the book for you! You really don’t need to be vegan to enjoy this book. Easy to read, with tips & advice.
I haven’t tried any of the recipes yet but have marked a few to try.

Emotionally, I am a vegan. Mentally, I am a vegan. I read How to Love Animals in a Human-Shaped World by Henry Mance and was appalled by the way in which we treat animals in our search for (preferably cheap) food. Practically, I am not a vegan. It worked for a while apart from the odd blip with regard to cheese but then a perfect storm of those events which you hope don't occur too often in your lifetime tempted me back to animal-based protein. It wasn't the taste - I know that I can get plant-based food that tastes just as good as anything plundered from the animal kingdom - it was the ease of being able to get sufficient protein when meals were often snatched in a few spare moments.

The building blocks of veganism are animal rights, the environment and health issues. I was fully convinced about the animal rights argument and the environmental position seems obvious to me but I needed more information about the health aspects as well as ways to be sure that we were getting sufficient protein in our diets. Healthy Vegan The Cookbook: Vegan Cooking Meets Nutrition Science seemed to be exactly what I needed as it concentrates primarily on the health aspects of veganism.

We begin by understanding the nutrition aspects of veganism and this is delivered by Niko Rittenau. I did occasionally wonder if he wasn't used to explaining the facts to non-professionals: I sometimes had to read a section several times to be sure that I understood the points being made. Persevere - you are going to get to grips with the science (rather than hopeful beliefs) behind the nutrition. Then you're going to find out about the 'building blocks' of meals. Ideally, there are five in each main meal - whole grains, vegetables, leafy vegetables, pulses and a topping - although you make a decent meal with just three blocks. It's a system that ensures that you get the nutrients you need.

This looks like a chunky book at 256 pages, but about a quarter is endnotes, etc. It's a book where statements made are properly supported. There are 'over ninety' recipes from chef Sebastian Copien and whilst this might not sound like many, you're using the building blocks system which means that there is an infinite variety in the food which you can produce - you simply have to follow certain principles. You will have to develop new habits: some grains and pulses need to be soaked and other grains are pre-cooked and kept in the fridge. I'm not entirely certain about the practicality of this - but I think that once the habit is established it could become part of our normal routines.

I did particularly like that it is stressed that there are no unhealthy foods - or even healthy foods. It's all about moderation. There are no rigid rules to follow. There is no need for restraint:

A great benefit of wholesome vegan food is that you can eat until you are full without having to count calories.

Here at Bookbag, we've looked at other books on veganism and not been completely impressed. This time I really felt that I had the help I needed to move to the food we really want to eat. I'd like to thank the publishers for making a copy available to us.

If only there was decent vegan cheese...

Healthy Vegan: The Cookbook, written by Niko Rittenau a nutrition scientist and the chef Sebastian Copien, is one of the best vegan cookery books I’ve come across. The nutritional information is very accessible and informative and all evidence-based.

The book contains beautiful photographs of the cooked dishes and the recipes themselves are not overly complicated and very easy to follow. Basti’s Tips at the end of the recipes are really useful with time-saving shortcuts, advice on ingredients, etc.

This is a must read for anyone considering pursuing a balanced vegan.

Although not vegan, I am allergic to eggs so many cookbooks are useless to me. I have recently started buying vegan cookbooks (and food products) as there is so much more out there these days and rarely is anything labelled as egg-free but vegan by its very nature is safe for me.
This book has some really good ideas and tasty recipes for me and the family to try. I'm going to buy the book to put on my kitchen shelf.

I'm not vegan but I'm diabetic and always looking for new ways to keep my diet varied and healthy.
This is an excellent cookbook as it also lists the nutritional values of each recipes and the first part is a good guide to keep your diet healthy.
The recipes are easy to follow and yummi.
Highly recommended.

This is a book that covers every aspect of vegan cooking. It is an extensive read, with all the information a new vegan or vegancurious need to know about food. I especially enjoyed reading Basti's tips and different variations to the recipes. There are a lot of great pictures in the book, but I really want every recipe to be accompanied by a picture.

Really informative and the recipes I’ve tried are delicious. This is a great change from some of the nutritionally insipid but highly popular vegan cookbooks out on the shelves at the moment. 10/10

This book is a really interesting read. It spends a long time explaining veganism and how scientifically you can be the healthiest vegan. I learnt so much from this section especially the importance of whole grains, fermented foods and adding vinegar to my diet. The recipes are easy to make and delicious but also include all the ‘science’ that make then heathy which is explained previously in the book. Thank you I will now purchase this book in a hard copy, it will become my new vegan ‘bible’.
