This cookbook is a gem--a real find! I love the variety of ways to preserve the harvest that are included, and finally feel like I can tackle my own elderflower cordial without hating the end result!

I have done relatively little by way of preserving, but I’ve been interested in learning to do more, particularly because I grow so many of my own fruits and vegetables. I found this book to be interesting in the wide variety of offerings that, surely, would appeal to everyone’s tastes. What I found a bit off putting was the author suggesting that the preserver use his or her own judgment, when it comes to sealing. Perhaps my results have not been the best because I tend to err on the side of caution. In no way, would I ever consider not boiling what I’ve canned to make certain of killing bacteria and creating a proper seal. I think this book might better serve veteran canners more so than someone like me who is just starting out.
