This past New Year’s Day I celebrated my thirteenth year of being vegetarian. Time has flown and I’ve never been unhappy with my decision–ever. The one thing that has made it easy for me to make what was a drastic change at that time was finding lots of tasty recipes. If you’ve been reading my reviews of vegan and vegetarian cookbooks, you know I have a pet peeve about seeing the same recipes over and over again: smoothies, shepherd’s pie, and most things that have arugula in them. Ha.

1000 Vegan & Vegetarian Meals brought to us by the editors of Chartwell books has something for everyone in it. Yes, even a couple of smoothie recipes but not shepherd’s pie. (wink) I love the variety of recipes that encompass most cuisines from Asian to Mexican to Middle Eastern. And there are many new versions of recipes in this book. One I am eager to try is the pastitsio recipe, which is a Greek ground beef and lamb dish that here is filled with vegetables with a tomato and yogurt sauce.

The variety of dishes range from comfort foods that you want to eat in these cold winter’s months to dishes like Greek Tortellini salad that sound perfect for a summer’s meal. Among the soups are a Tortilla Soup with fresh flavors that will make you forget that chicken was ever once supposed to be an ingredient. And while shakshuka seems to be in everyone’s cookbook lately, the one here is filled with baby greens with the tomato sauce (8-9 cherry tomatoes in this case) taking a back seat to asparagus, beans, spinach, leeks to make a very healthy dish that I look forward to cooking.

Beet brownies? Yeah, I might not be able to convince everyone around me to give them a try, but I will. Maybe even with some walnuts thrown in. Also there’s a non-dairy cheesecake to try…and a strawberry tart.

Honestly, I vowed not to buy anymore cookbooks (except for maybe Ottolenghi), but there is an excellent chance I’m going to buy this hardcover and start cooking right away.

I have only one gripe about this book and that is the inconsistency of the measurements. In the breakfast recipes, flour and the like are given in ounces (which I find annoying but doable) but in later recipes flour, etc. are given in cups (which I prefer). This is by no means a game changer. Consistency is just a plus.

Also, for those of you who note these things. Nutritional information is not provided. Most recipes have pictures but not all. The ones that do currently have my drool all over them. Good thing that this isn’t your copy of the book, eh? 😉

Are you or someone you know a vegan? If yes, this book is sure to be a hit. It is also a terrific resource for non vegans. Imagine so many recipes all accessible in one large volume. Included are ideas for breakfast, salads, soups, hearty comfort food, sweet treats and more. There is even a section called Quick and Tasty for when time is scarce.

It is impossible to list even a fractions of the recipes included in this compendium. Just a few are those for French Toast Maple Syrup Muffins ; Cauliflower Rice with Spiced Walnuts;, Coconut, Zucchini and Mushroom Soup; Three Tomato and Goat Cheese Tart; Vegetable Pastitsio and Chestnut and Mushroom Bourguignon. Each recipe has clear directions and there is a photograph to accompany each.

This is a wonderful resource. Enjoy!

I have been trying to get back into eating plant based and trying to get others around to me to at least see it’s benefits.

Plant based diets are often ‘dumbed down’ and turned basic and its the main reason people aren’t interested. The recipes in this show that all food can be made plant based very easily. I mean a 1000 recipes come on how many more do you need.

As one of my new year resolutions I want to eat less meat from now on, and so when I encountered this book I though it would be the perfect opportunity to discover new recipes. As for the recipes themselves, there was a vast variety of dishes and they looked delicious. I am excited to try so many of these during this year, and further in the future of course! As soon as peaches are in season I will be trying the arugula and peach salad, it was definitely one of my favourites.

One thing I kind of want to complain is the digital format was a bit difficult to read and some of the pages were kind of weird, but I don’t think that will happen in the printed copy. Also this didn’t lower my rating by any means.

Such a large variety of meals and each one has so many variations to change up the dish and make it unique! Gives me so many amazing ideas for meals and such delicious and easy recipes to make during the week and for a crowd!! This is a winner!

Best vegan/vegetarian cookbook I’ve seen. I’m not a vegetarian but I am trying to make a few meat free meals a week for my family. This book is easy to follow with recipes that won’t have you missing the meat. The Mediterranean roasted veggie wrap is going to be a weekly meal in my house. Quick and flavorful. Biggest positive in my opinion is this there are pictures with 90% of the recipes. We eat with our eyes first so it makes sense to entice us with what the meal will (or should) look like when finished. Also there’s ways to switch up or switch out ingredients included with some of the recipes too.

Sometimes veggie cookbooks can be bean stew after bean stew, but this genuinely has a lot of brand new ideas. I like how each recipe has a couple of spin-off ideas to make it your own. Like it a lot! Only annoying thing is that it didn't really function well on the app - constantly jumping backwards and forwards which made me almost scream in irritation.

A great cookbook filled with an amazing range of easy to make dishes. Lots of the recipies are vegan with a good range of vegetarian dishes (often offering vegan substitutions).

Most of the recipies are accompanied by beautiful photos. The instructions are clear and easy to follow.

There is a great section of grazing dishes such as tapenades, dips, spreads etc.

I really liked the page near the front of the book with great dairy substitutes.

Overall I think this book has a huge variety of recipies and there's something for everyone. Looking forward to trying out some of the recipies.

I am neither vegan or vegetarian, but I am however trying to make an effort to eat a little less meat, both for health and cost reasons.
What I wasn't expecting to find was many beautiful and interesting dairy free desert ideas (I am lactose intolerant)!

This cookbook has clear and easy to follow instructions to make creative dishes which are interesting in their own right - not just 'animal product free' versions of already popular meals.
As someone who was openly rather skeptical when I first sat down to read it, I am pleased to say I am genuinely impressed.

Make 2021 the year you explore cooking that little bit more and stop relying on the same few tried and tested meals (easily done, I know I'm guilty of it!).

A nice book with good recipes. In the beginning I thought they were quite rich and fatty, but there are healthy salads and soups in the book as well. Not every recipe comes with a picture. I will try some of these recipes and I can see a few becoming favorites. Hard to pick out a favorite one yet, but I especially appreciated the vegan milk recipes at the very beginning. Points for the more exotic recipes. They look very interesting!

This is a nice compilation of recipes, especially for vegetarians (as opposed to vegans) as quite a lot of the recipes use animal products like eggs and dairy. It won't work for me as there is no nutritional information provided for the recipes and it is rather high-carb and low-protein, plus there are a lot of wheat-based recipes and one of my kids is gluten free. There are photos for some recipes but not the majority. Several recipes are put on each page, with relatively easy directions. It honestly didn't seem like 1000 recipes at all to me but I'll take their word for it. This will be a nice addition to a vegetarian cookbook collection or good gift for the newly vegetarian, especially younger vegetarians who don't have to be as conscious of things like carb, protein and fiber counts.

This cookbook is a useful compilation of all sorts of vegan and vegetarian recipes, from many different cultures. Most seem easy to make, with nice photos to illustrate the final product in most cases. In some recipes, the traditional methods are altered to make it easier and lower fat content--for example, the Baked Zucchini Falafel avoids frying in oil. There are also some interesting chapters: Grazing Dishes, Quick & Tasty, and Feed a Crowd. With such a wide assortment of foods, this cookbook will be well-used in any household, whether vegan/vegetarian or not.

Amazing colourful recipe book packed with delicious recipes.
Being new to trying Vegan dishes, I loved how this was set out on the pages and also how the sections were broken down.
This is definitely one I would buy for my cookbook shelf but also for vegan friends too.

I am a new Vegetarian convert so this book was brilliant for me. My daughter was a vegetarian for 14 years and is now Vegan and she liked this book as well although it is better suited to vegetarians.
Recipes are a mix of simple and more challenging.
Recipes are from lots of different countries which was good for me.
The only thing it lacked was nutritional information.

This is a lovely cookbook with beautiful photos and easy to follow recipes. I really enjoy how short the recipes are. My only critique would be more clearly annotating which recipes are vegan and which are vegetarian for quick perusal.

First of, this is a very pretty book. The layout is very clean, yet fun, and the food pics are nice. The recipes are very easy to follow and adapt to your own preference, and every recipe comes with several suggestions to change the recipe up a bit. The measurements aren't consistent though, and some of the labeling isn't correct (but I'm convinced this will be solved before publication).
The recipes themselves are fine. If you are looking for new staple meals, this is the place to find them. But nothing is really new or inspiring. I have cooked several of the dishes, and they were all tasty enough... but nothing mindblowing.
I can't really make a judgement on the gluten-free part of the recipes, but in general this book is especially good for vegetarians (or vegans with easy access to good vegan cheese). The baking part is almost exclusively vegan though, and looks promising enough (I haven't made any of these recipes).

Overall, a nice book that I would recommend, but mainly to starting vegetarians.

I would not add 1000 Vegan and Vegetarian Meals edited by Chartwell Books to a classroom or for curriculum adoption. However, the book was a wonderful starting point for people who are just beginning their journey into a more healthy lifestyle. I could see this one being a staple in many homes.

This is a great recipe book!

Not every recipe has a picture which is kind of a bummer, but every picture that is included is nice! There's a variety of recipes from dinners to desserts. Some are very unique as well including the vegetable loaf and various tarts.

It's a fun recipe book with ideas on how to get more vegetables in your diet! Some of the recipes seem time intensive but others are approachable. Overall a fun find!

1000 Vegan and Vegetarian Meals is a new veg*n recipe collection with recipes curated and presented by the Chartwell editors. Due out 23rd Feb 2021 from Quarto on their Chartwell imprint, it's 256 pages and will be available in hardcover format.

This is a graphically appealing, well written, and accessible cookbook with an array of vegetarian and some vegan recipes to appeal to most tastes. I really liked the layout and formatting of this cookbook. There is no introduction or basic techniques or tool info. The book hops right into the recipe selections. The recipes which are included are arranged roughly thematically: breakfast & brunch, super salads, healthy soups, grazing dishes, quick & tasty, hearty comfort food, feed a crowd, and sweet treats. There are a huge number of recipes, though many are not very complex at all, and they represent a broad number of different world cuisines. I noticed some variations in the way the recipes were actually written and the way the ingredients were measured. According to the editorial information, there are three main recipe developers: Susannah Blake, Deborah Gray, and Michael Keogh, which could possibly explain variations. It's not a deal-breaker, there isn't that much difference really, but it is noticeable.

Ingredient measurements are supplied in American standard measurements with some metric measures included (yay!). The nutritional information is not included. Each recipe includes a header with a short description of the recipe and approximate servings. Extra tips or recipe alternatives are listed in text boxes in the recipes. The recipes themselves are fairly straightforward and are made for the most part with easily sourced ingredients. Many are very simple, none of them are overly complex. The photography is abundant and clear and the recipes are illustrated simply and clearly. Nearly all of the recipes also include a highlighted text box offering tips and alternative presentations and variations.

This is a large collection of recipes and even allowing for the fact that some of them are very similar to others in the same category, this will keep meat-free cooking fans going for ages. There are many simple "everyday" recipes which are anything but boring alongside fancier "special" dinner recipes. We tried several dishes and all of them were tasty and well written.

We're definitely going to try more of these recipes.

Five stars. This is a massive cookbook which will be used. It would make a superlative housewarming gift to a friend or family member living on their own - college student, new graduate, newlyweds, kids flying the nest, etc or a friend trying to eat more health consciously with better quality ingredients as well as a nice acquisition for the home library.

Simple, easy to follow recipes, it is nice to find a cookbook that offers new ideas. we look forward to trying many of these recipes over the coming months

This book is filled with tons of creative recipes perfect for vegeterians looking to spice up their routines and for those looking to eat more plant based meals. I love that each one has ideas for customizaion.

Enough pictures. Many variations of a dish. Colorful servings. Creative as well as comforting. covers a wide range of cuisines.
I should try soaking the oats overnight.
Corn Fritters with banana sounds very interesting. There is a ripe banana waiting just to be used this way.
A break from sweet banana bread. Interestingly fritters are made with raw bananas too.
Didnt know the tip that the besan needs to rest overnight for chilla or the farinata.
Cashew Mayonnaise.
Dukkah as a topping on hummus
Cashew spread
Molletes served on circular breads is so refreshing to look at.
Quinoa and black bean tacos.
spinach vadai
Sweet potato flatbread
Avocado arranged as rose
Beat and Bean burger
Koshari like Kichdi
Didnt realise the oven cooked be used for some of the Indian veggie cooking. As well as onions to coconut chutney.

A good selection of vegan and veggie meals - I particularly like that every recipe has a picture as it is a pet peeve of mine when I don't know what my dish is supposed to look like!
I like that there are options on most dishes to substitute flavours, or to make the dish vegan or gluten free.

I thoroughly enjoyed this cookbook. It's packed full of recipes with easy to access ingredients, and there is a good mix of vegetarian and vegan options. Many of the vegetarian recipes can easily be tweaked to make them vegan as well.

The pictures of the food are gorgeous and look mouthwatering. There's a heavy emphasis on fresh and seasonal ingredients, and I bookmarked a lot of them to prepare when I get the chance. The recipes come from various cultures, and seem to represent the best options from all different areas around the world. Recipes include breakfast and brunch, salads, soups, grazing dishes, quick recipes, comfort foods, recipes to feed a crowd, and sweet treats, and I can easily see myself using these recipes in a range of situations.

As someone who is always looking for more plant-based recipes and a healthier way to eat, I’m often disappointed in the recipe books offered. I don’t eat tofu or soy and hate complicated recipes, but I do love the wide-range of recipes plants can offer us and would love to mostly eat them. This book was not a disappointment. Eye-catching photos with each recipe, scrumptious recipes, many of them easy, with many tips on changing or adding ingredients. I loved the originality. As a non-vegan who loves a lot of plant-based, this is definitely a book of recipes I would be happy to keep in my repertoire.

What I like about the book is that it is a good mix of vegan and vegetarian recipes so that you don’t end up in obscure, unknown ingredient lists which look too scary to try, but do include vegan alternatives you feel confident trying out.
In the introduction you also get a good list of meat and dairy-free substitutes, a list you should photocopy and keep handy in your kitchen for when you go shopping or plan new meal ideas.
Seeing as there are 1000 recipes, not all are new. Most of us know how to whip up an omelette and add different toppings or make a few different wraps. But there are great recipes included which you probably haven’t seen and some common recipes simplified (some bread are actually achievable even if you aren’t a baker!).
The good thing is that you get a basic recipe, and then three or four variations, may it be toppings, ingredients or other changes. So if there is something you like, you can learn to make it in different ways and mix it up, as I did with a number of dips and sides.

This cookbook has a wide range of recipes and good photos. The variations listed with the recipes is especially helpful. Some of the ingredients were unfamiliar and may not be available in rural areas, but kudos for including flavors influenced by a wide range of cultures.

As the title suggests, this cookbook contains SO MANY recipes. Each one has a great format which is easy to follow, a beautiful hand-lettering looking font for the name of the recipe, and good quality photos to accompany each recipe. I actually prefer when cookbooks have this format over the full page picture on page 5 and the recipe on page 12. It really allows you to flip through and then stop when you are interested in a recipe. I would definitely buy this for myself or as a gift.

A treasure trove of recipes for the most delicious vegan, vegetarian and gluten-free meals. My mouth watered as I eagerly paged through, taking in the gorgeous photos and apparent ease of meal prep. With this mighty 1,000-recipe cookbook, I may transform my husband from a man-food snob to a veggie connoisseur. Hallelujah!

You cannot go wrong with a thousand vegetarian recipes and it is near impossible to not find an alternative to meat-based meals in this book.
This is a nice book containing a good mix of simple to complicated recipes, from meals to graze on to ones for the whole family. The only downside is the lack of macronutrient information but I suppose you can use the recipes as a starting point.

I haven't counted all of the recipes to ensure there is a thousand but there are so many I am confident it will not matter.

Although there are hundreds of cookbooks out there with decent recipes for vegan and vegetarian diets, 1000 Vegan and Vegetarian Meals: Everyday Recipes to Make Healthy Eating Easy, by the editors of Chartwell Books stands out as one of the best, due to the fact that it contains not only excellent recipes, but also photographs of almost every dish.

For those of you who aren’t vegetarian or vegan, this book has plenty of great side dishes that can be served with meat, poultry, or fish. And although that isn’t the main purpose of this book, it’s a fact nonetheless. Many of the dishes included will make you forget that you aren’t eating animal products. The recipes are easy-to-follow, and most include ingredients that are easy to find. Ingredients include lots of nuts, dairy and non-dairy cheeses, tofu – of course, and vegetables, fruits, and whole grains – everything healthy.

The salad section of this cookbook is impressive; there is a salad to accompany almost everything. There are also breakfasts, soups (lots of them and they are mouthwatering), “grazing” dishes including dips and fun appetizers, quick dishes, breads, pastas, pizzas, burgers (untraditional, of course and meatless), curries, and comfort foods. There are also some pretty awesome desserts.

One of the best parts about this cookbook is that there are flavors borrowed from every part of the world: Asia, Europe, America, Middle East, etc. Variety is very helpful for those who are trying to keep strict dietary laws, and there are enough different flavors in the recipes that boredom won’t be a problem.

It's hard to judge the quality from an e-book, but the book looks to be clear and well illustrated, including photographs for most recipes. The 1000 meals include several alternatives for most recipes, which I like because it makes it easy to find, adapt and repeat recipes. For me, a recipe book is worth buying if I look through it and would make at least 50% of the recipes in it, and this one easily hits that mark. I also like it because the recipes don't include endless lists of obscure ingredients.

Definitely a worthy addition to the kitchen bookshelf.

Wonderful cookbook for everyone who’s interested in vegetarian and vegan cuisine. The book includes a wide range of recipes from easy peasy beginners recipes to a little more advanced ones; the recipes are based on simple and easy to find ingredients and focus mostly on vegetables.
It also includes a wide range of ethnic food, like Mexican mole or Russian borscht and comes with beautiful pictures .

I’d recommend this book especially to veggie-beginners, since it shows how diverse vegetarian cuisine can be.

Extra bonus points for the index, where recipes are listed after names and ingredients.

I tested some great recipes of this book ! The main dishes are very good and also super inspiring to come out with your own recipes yourselves. I am a student and always am looking for cheap, easy and quick recipes to make, and I found some very good in this one.

If you are looking for great Vegan and Vegetarian Meals, make sure to check this one out !

The pictures alone will want to make you try these recipes out. Each recipe is shown in real like you are about to eat it. The recipes are very detailed and it shows extra ingredients if you would like to try them with it. It is very easy to understand and a list of ingredients would be easy to make. I would recommend this book to anyone, especially if you are not a vegetarian and just need some new meal ideas!!!

Really good cookbook, nice easy to read layout with pictures. The recipes themselves all look quite simple and easy to make. No super long ingredient lists or faffy hard to find / never heard of items which is my pet hate in cookery books! Sadly the book is not completely vegan, but most of the non-vegan ones can be adapted if using vegan cheese. Can't wait to try out more of the recipes!
